- 1 Cast Iron Pan
Ingredients
- 1 large onion
- 2 tbsp olive oil
- 2 cloves garlic
- 1 lb smoked sausage
- 4 large potatoes
- 1 can chopped green chilis
- 1 can corn
- 4 oz shredded cheddar cheese
- 1 green onion, diced
- 4 tbsp sour cream
Instructions
- Chop onion
- Peel and Cube potatoes
- Cut sausage in half and slice
- Drain the can of corn
- In a large cast iron pan, cook and stir the onion in oil until tender. Add garlic and cook 1 more minute.
- Add potatoes and cook uncovered for 20 minutes.
- Add sausage and cook until meat and potatoes are tender and beginning to brown. (about 10-15 min)
- Stir in chilies and corn, heat through
- Add cheddar cheese, green onion
- Top with sour cream, if desired
