Parmesan Asparagus Orzo Pasta

This pasta recipe is incredibly easy to make while camping because it cooks in one pot. This makes not only cooking a breeze, but the cleanup is minimal.

Equipment

  • 1 Pot

Ingredients
  

  • 2 cups water
  • 1 cup orzo
  • 1/2 lb asparagus
  • 1/2 tbsp olive oil
  • 1/2 tspn basil
  • 1/2 tspn thyme
  • 1/2 tspn garlic powder
  • 1/2 tspn salt
  • 1/4 tspn red pepper flakes
  • 1/2 cup parmesan cheese shredded
  • 2 tbsp pine nuts
  • 2 tbsp roma tomatoes diced

Instructions
 

  • Cut tough ends of asparagus and discard
  • Chop asparagus into small pieces... about 1 inch
  • Combine water, orzo, asparagus, oil and spices into a medium pot
  • Bring to a boil and cook for about 5 minutes
  • Once orzo is tender, reduce heat to low and add cheese until melted
  • Season with salt and pepper
  • Top with pine nuts and tomatoes
  • Serve and Enjoy
