Dove and Sausage Jambalaya

After dove season ends, I usually have a lot of dove meat on hand. While everyone loves the traditional bacon wrapped dove jalapeno popper thing, I like to find new ways to use dove in my recipes. The addition of dove (or any game meat) in this recipe adds a rustic quality and takes it to another level.

Equipment

  • 1 Skillet
  • 1 Pot

Ingredients
  

  • 20 dove breast halves
  • 1 link cooked sausage
  • 1 tbsp butter
  • 1 bell pepper
  • ½ white onion
  • 1 tbsp olive oil
  • 1 box Zatarans Jambalaya Mix
  • 1 can Rotel tomatoes
  • 1 cup water

Instructions
 

  • Slice dove breast halves into smaller bite size pieces
  • Slice sausage
  • Cook dove meat in skillet with butter
  • Add sausage to brown
  • Cook peppers and onion in olive oil in large pot
  • Add dove and sausage to the pot
  • Add Jambalaya mix
  • Add rotel tomatoes (undrained)
  • Add 1 cup of water
  • Bring to a boil and then lower to a simmer
  • Allow to simmer covered on low for 20 - 25 min, until rice is done
  • Serve and Enjoy
