These are so easy to put together and are perfect for a quick breakfast that can be eaten on the go.

Equipment

  • 1 Mixing Bowl
  • 1 Muffin Tin
  • 1 Oven

Ingredients
  

  • 6 eggs
  • ¼ cup heavy cream
  • salt & pepper to taste
  • 1 dash preferred seasoning
  • ½ cup shredded cheese (guyere or havarti)
  • ¼ cup mushrooms (chopped)

Instructions
 

  • Mix eggs and cream in a bowl with seasonings
  • Pour egg mixture into greased muffin tins (6 muffin cups)
  • Add mushrooms and cheese and any other fillers of your choice to the muffin cups
  • Bake at 365° for 20 min
  • Serve with salsa and sour cream (if desired)
