These are so easy to put together and are perfect for a quick breakfast that can be eaten on the go.

- 6 eggs
- ¼ cup heavy cream
- salt & pepper to taste
- 1 dash preferred seasoning
- ½ cup shredded cheese (guyere or havarti)
- ¼ cup mushrooms (chopped)
Mix eggs and cream in a bowl with seasonings
Pour egg mixture into greased muffin tins (6 muffin cups)
Add mushrooms and cheese and any other fillers of your choice to the muffin cups
Bake at 365° for 20 min
Serve with salsa and sour cream (if desired)
