Pumpkin French Toast

- 4 slices Brioche Bread
- 3 eggs
- ½ cup milk
- ½ cup pumpkin puree (not pumpkin pie filling)
- 2 tbsp light brown sugar
- 2 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 tbsp butter
In a shallow dish, whisk together the eggs, milk, pumpkin puree, brown sugar, spices, and vanilla extract.
Heat skillet or griddle over medium heat. Add butter and melt.
Dip one slice of bread into batter and soak for 10 seconds per side.
Place coated bread onto heated pan and cook for 2-4 min per side.
