Cornish Game Hen
Cooking this small meal over a campfire is not only easy, but really develops the flavor as the vegetables and spices steam inside the hen.

- 2 Cornish Game Hens
- 1 cup Diced Carrots
- 1 cup Diced Potato
- 1/2 cup Chopped Onion
- 2 cloves Garlic, chopped
- 1/2 cup Water (divided 1/4 cup per hen)
- 2 tbsp Butter (divided 1 tbsp per hen)
- 1 tbsp Ground Rosemary
- 1 tbsp Salt
- 1 tsp Pepper
Thaw hens and remove packet from inside hens (if included)
Place 3 pieces of foil down for each hen
Place Hen in the center of foil
Fill the cavity of each hen with vegetables, butter and water
Season the outside of each hen with the remaining seasonings
Wrap hens with foil (3 layers to prevent burning or rips)
Place each foil wrapped hen in the campfire coals
Cook for about an hour, flipping every 10 minutes until 165 degrees (internal temp)
