Taco Salad Pasta

This is a great summer dish that we love to customize by changing the cheeses used and the ground meat as well. Sometimes we use ground turkey or lamb and incorporate gourmet cheeses like gruyere instead of cheddar.
But the basic recipe is great on it's own because it has all the flavors of a taco, but in a different format. Taco in a bowl with pasta as the guest star.

Equipment

  • 1 Pot to boil pasta
  • 1 Skillet
  • 1 Mixing Bowl
  • 1 Strainer/Colander
  • 1 Cheese Grater

Ingredients
  

  • 4 oz Rotini Pasta
  • 1/2 lb Ground Beef
  • 1/4 cup Water
  • 1 tbsp Taco Seasoning
  • 1 Green Bell Pepper Diced
  • 1-2 Roma Tomatoes Seeded and Diced
  • 2 tbsp Salsa
  • 2 tbsp Sour Cream
  • 2 tbsp Cheddar Cheese Shredded

Instructions
 

  • Cook pasta according to directions and drain
  • Brown ground beef over medium heat in skillet
  • Drain beef of fat
  • Add water, taco seasoning, and bell pepper to ground beef
  • Simmer until sauce begins to thicken
  • Combine salsa and sour cream in a separate bowl
  • Add beef mixture to pasta and serve
  • Top with cheese, sour cream salsa, and diced tomatoes
